Need to know what potato is best for your side dish? We’ve got the answer!

To pair the perfect dish with the right potato side, whether it be mashed, boiled, fried or baked, you have got to pick the right potato for the job! There are huge varieties available at your local grocery store: russet, white, red, purple, small, large, fingerling, and on and on! To get the right potato for the right job, check out our quick list:

Baking, Mashing or Frying:
These are best because of their high starch levels
Russet and Idaho

Roasting:
These are best because they have a medium amount of starch
Yellow Finns, purple, white, red, Yukon gold, new potatoes, fingerling

Boiling
These are best because they are low in starch
Ruby crescents and petites
