VALENTINE’S DAY WILD MUSHROOM FONDUE

The perfect simple way to celebrate Valentine's with 2 of my favorite ingredients, beer and cheese! However, this fondue is so good that you will want it more than once a year.
INGREDIENTS:
  • 2 oz dried wild mushrooms, rehydrated in warm water and drained
  • 1 red bell pepper, diced
  • 1 jalapeño, diced
  • 1 serano pepper, diced
  • 1 large tomato, diced
  • 6 oz beer
  • 10 oz shredded pepper jack cheese
  • 1 tbsp oil
  • 1 yellow onion, diced
  • Salt & pepper to taste
PREPARATION:
  • Set your FIREDISC® to medium high heat, add the oil and sauté all the vegetables for 8 minutes.
  • Add the beer and cook until all the liquid has evaporated.
  • Turn your FFIREDISC® off and sprinkle the cheese over the vegetables.
  • Your FIREDISC® will retain enough heat to melt the cheese but not over cook it.
  • Stir until all the cheese is melted and serve! Enjoy!
