WHITE FISH WITH BLACK OLIVES AND CHICKPEAS

(SERVINGS: 5) If you love black olives, tomatoes, garlic and chickpeas then this fish recipe is for you. Fish is so healthy that it is good to add to your menu several times a week. Be sure to check out our many recipes for fish.
INGREDIENTS:
  • 1 lb of your favorite white fish, skin removed
  • 2 tsp of olive oil
  • ½ onion, chopped
  • 2 clove of garlic, chopped
  • 1 tbs of white wine
  • ½ tomato, diced
  • ½ cup of chickpeas
  • ½ cup of black olives
  • Salt and pepper to taste
  • 2 c flour
PREPARATION:
  • Season the fish with salt and pepper and then bread it with the flour.
  • Set the FireDisc to medium heat and add the olive oil.
  • Cook the fish for 3 minutes per side and set it aside.
  • Sautee the onion, garlic, and tomato and cook for another 5 minutes.
  • Add the white wine and let the liquid reduce to half of the original volume.
  • Place the fish back in the FireDisc, add the black olives and the chickpeas.
  • Serve over white rice or quinoa, enjoy!
