INGREDIENTS:
- 4 tablespoons avocado oil or substitute
- 20 ounces bratwurst or your favorite sausage or meat, cut into 1-inch pieces
- 3 red potatoes, roughly chopped
- 2 yellow squash, sliced
- Salt and pepper
- 1 red bell pepper, cored and sliced
- 1 green bell pepper, cored and sliced
- 2 small white onions, sliced
- 2 garlic cloves, minced
- 3 tablespoons honey mustard
- ½ 6-ounce light beer or lemon-lime soda
- 2 tablespoons Worcestershire sauce
- ½ cup chopped green onion for topping
- Heat your FIREDISC to medium-high heat. Add avocado oil.
- Add sausage and cook until browned and crisped, while stirring. Move meat to outer heat ring.
- Add potatoes. Cook until about almost done. Push to the top of the 'disc or remove. Add squash. Cook until tender, about 3 minutes, stirring. Add salt and pepper to taste.
- Add bell peppers and onions. Cook until tender, stirring.
- Stir peppers, onions, squash, potatoes, and sausage together. Stir in garlic. Cook for about 3 minutes, stirring.
- In a small bowl, whisk together the honey mustard, beer, and Worcestershire sauce. Pour sauce into meat mixture. Reduce heat to medium-low. Cook until the sauce reduces, stirring.
- Season to taste with salt and pepper, if needed. Top with green onion. Serve warm. Also great over rice.
