Ever fallen short of awesome with frying oysters on the stovetop? Take heart. With a well-crafted recipe and the frying capacity of a FIREDISC® cooker, your fortunes are about to change. This incredible sauce doesn’t hurt, either.
INGREDIENTS:
  • Peanut or oil, for frying
  • 3/4 cup buttermilk
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Dash hot sauce
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • Kosher salt and freshly ground black pepper
  • 36 shucked oysters
  • HORSERADISH SAUCE:
  • 1 cup mayonnaise
  • 2 tablespoons dijon mustard
  • 2 tablespoons ketchup
  • 2 teaspoons horseradish
  • 1/4 teaspoon cayenne pepper
  • Mix sauce ingredients together.
PREPARATION:
  • Heat oil in FIREDISC® cooker to 350 degrees Fahrenheit. Whisk together buttermilk, garlic powder, paprika, and hot sauce in a casserole dish. Whisk together flour, cornmeal, salt, and pepper in a separate casserole dish.
  • Add oysters to the buttermilk. Let soak. Remove, letting excess drip off.
  • Dredge through cornmeal mixture, tapping off excess. Fry in the hot oil in batches, until golden and crisp, about 2 minutes. Remove to a paper towel-lined plate.
  • Sprinkle with salt and pepper. Serve hot with horseradish sauce.
