BRIANNA’S BOILED POTATOES WITH BUTTER

A good side dish can give your meal some identity. When you crack open a bag of store-brand potato chips, what does that say, then? Whip up these butter potatoes and relish your newfound fame.
INGREDIENTS:
  • 1 pound small new potatoes
  • 1 head garlic, halved crosswise
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • Kosher salt
  • 2 to 4 tablespoons unsalted butter
  • Freshly ground black pepper
PREPARATION:
  • Put potatoes, garlic, bay leaf, and peppercorns in FIREDISC® cooker. Add cold water to cover by about an inch. Season with salt.
  • Bring to a boil. Lower heat. Simmer until potatoes are fork-tender, about 5 to 8 minutes depending on their size.
  • Drain and discard garlic, bay leaves, and peppercorns. Halve potatoes, if large. Toss with butter.
  • Season with salt and pepper, to taste. Keep warm.
