Buffalo Bayou Beer Braised Beef Cheeks (Barbacoa)

If you weren't able to be at our Grand Opening of our Katy, TX retail store, now you can make this on your own FIREDISC®
INGREDIENTS:
  • 5 lbs Beef Cheeks
  • 2 cans of Crush City IPA (or your favorite beer)
  • 1 White Onion
  • 8 garlic cloves
  • 2-3 Jalapenos
  • 1/4 cup fresh Oregano
  • 1 bunch of Cilantro
  • 2 Tsp of ground Cumin
  • 4 Tsp Salt
  • 2 Tsp Pepper
  • 1/4 cup of cooking oil
PREPARATION:
  • Gather all ingredients except the beef and cooking oil and blend in food processor or blender. This will be your braising liquid for the cheeks.
  • Place FIREDISC® on med-high heat, add oil to disc, sear off the meal and make sure it is nice and brown on all sides.
  • Lower the heat down to med low and add the braising liquid to the FIREDISC® with the beef cheeks.
  • Cover and cook low and slow for about 3 to 4 hours or until the meat is fork tender.
  • This can be kept in the FIREDISC® in the center while you cook totillas on the edges of the disc. Serve with diced onions, cilatro and your favorite salsa.
