INGREDIENTS:
- 2 - 8 ounces Neufchatel or cream cheese, softened
- 2 large eggs
- ½ cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1 cup butter softened
- ¾ cup granulated sugar
- ¾ cup light brown sugar
- 2 ⅓ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2½ cups semi-sweet chocolate chips divided
- Heat the FIREDISC® to medium-high heat. Add the Ultimate Steaming Grate. Spray disposable with baking spray. Set aside.
- Using an electric hand mixer or stand mixer, whip together cream cheese, 2 large eggs, ½ cup granulated sugar, and 1 teaspoon vanilla. Beat on medium-high for 2 minutes or until smooth. Set aside.
- In a large mixing bowl beat together softened butter, ¾ cup granulated sugar, ¾ cup brown sugar, and 1 teaspoon vanilla until combined. Add 2 large eggs, one at a time. Beat well after each addition.
- Sift together flour, baking soda, and salt. Lower the speed of the mixer. Add to the creamed butter.
- Stop and scrape the sides of the bowl. (A whisk works to sift the dry ingredients.) Mix in 2 cups of chocolate chips by hand until distributed in cookie dough.
- Spread ⅔ of cookie dough in the pan. Top with cheesecake mixture. Spread. Use a teaspoon to dollop the remaining cookie dough on top.
- Spread over cheesecake. It might not be completely covered. Sprinkle with the remaining ½ cup of chocolate chips.
- Bake for 30 minutes in the FIREDISC®, with the Ultimate FlatTop Lid in place. Check for browning. Lay aluminum foil on top.
- Bake for another 20-30 minutes or until a toothpick inserted into the center comes back clean. Cool in the pan on a baking rack. Store leftovers chilled.
- NOTE: Adjust cooking temperature if any stage of this — or any — recipe goes too fast or gets too hot. turn the heat down a bit and keep on cooking. Your FIREDISC® cooker heats quickly and evenly.
