For game day or everyday, this sweet and sour chicken recipe feeds and is sure to please a crowd. Savory ingredients like onion, carrot, peas, pineapple and more, it is truly a one dish wonder.
INGREDIENTS:
- 1/4 c flour
- 2 lbs chicken breast, cut into 1 inch cubes
- 1 tbsp. garlic salt
- 1 tbsp. white pepper
- 1/4 c oil
- 1 onion, small dice
- 1 carrot, small diced
- 3 tbsp. peas
- 1 c crushed pineapple, with juice
- 1 1/2 c water
- 1/4 c brown sugar
- 4 c cooked rice
- Bread the chicken in a mixture of the flour, garlic salt, and white pepper.
- Set your FireDisc to HIGH and heat the oil for 2 minutes.
- Cook the chicken for 8 minutes, add the onion, carrot, and peas to the FireDisc and cook for another 5 minutes.
- In a separate bowl combine the pineapple with it's juice, water, and brown sugar mixing well.
- Reduce the heat to LOW and add the rice, cooking for 2 minutes, add the sauce and mix thoroughly.
- Cook for 3 more minutes moving the rice regularly.
