INGREDIENTS:
- 1/2 cup roughly chopped white onion
- 1/2 cup roughly chopped green bell pepper
- 2 large garlic cloves, roughly chopped
- 2 sweet Caribbean peppers, seeded and roughly chopped
- Grape Seed Oil for sauteing
- 1/2 pound lean ground beef
- 1 tablespoon tomato paste
- FIREDISC® Fajita Seasoning to taste
- 1/2 teaspoon ground cumin
- 1/2 teaspoon fine sea salt
- 1/4 easpoon freshly ground black pepper
- 10 store-bought empanada discs, thawed if frozen
- Grape Seed Oil for frying
- Add Grape Seed Oil in the FD - heat to low temperature
- Add the chopped Green Peppers, Red Peppers, sweet peppers, onions and Garlic - Saute in pan over the center
- Add the Ground Beef and cook
- Once Meat is cook - Add in your tomato paste and FIREDISC® Fully Fired Up Fajita Seasoning
- Remove Mixture from the FIREDISC®
- Make the empanadas - use the frozen and thaw
- Add in the meat mixture to the center, fold over and seal with a fork along the edges.
- Add Oil for Frying into the FIREDISC® - Medium Heat
- Add the empanadas - baste with the oil as we good.
- Cook on both sides until golden brown
- Serve with Sweet Plantain chips
