Fun Foiled Surf & Turf

INGREDIENTS:
  • ½ pound sirloin steak, cut into 1-inch cubes
  • ½ pound shrimp, cleaned and deveined
  • 2 ears of corn, cut into 4 pieces
  • 1 red onion, sliced
  • 1 cup whole cherry tomatoes
  • 2 lemons, sliced into wedges
  • 2 cloves garlic, thinly sliced
  • 1 tablespoon Diane’s Secret Seafood Seasoning
  • 4 tablespoons unsalted butter, melted; or 4 tablespoons olive oil
  • 4 sprigs of fresh thyme
  • ground black pepper
  • 1 tablespoon chopped parsley, for garnish
PREPARATION:
  • Heat FIREDISC® cooker to high heat. Cut four sheets of foil about 12 inches long. Split steak, shrimp, corn, onion, tomatoes, half the lemon wedges, and garlic between each foil packet.
  • Season with Diane’s Secret Seafood Seasoning. Drizzle with melted butter. Top each packet with a spring of fresh thyme and black pepper.
  • Fold foil packets in half and roll the top and bottom edges to seal. Cook until cooked through, about 6-8 minutes per side, or until steak cooks as desired. Garnish with parsley. Serve with remaining lemon wedges.
  • NOTE: Adjust cooking temperature if any stage of this — or any — recipe goes too fast or gets too hot. turn the heat down a bit and keep on cooking. Your FIREDISC® cooker heats quickly and evenly.
