GLORIA’S FILET MIGNON IN MUSHROOM SAUCE

INGREDIENTS:
  • 4 tablespoons unsalted butter, divided
  • 2 tablespoons olive oil, divided
  • 16 oz baby Bella mushrooms, thickly sliced
  • 1 small onion, finely diced
  • 4 garlic cloves, minced
  • 1 tablespoon fresh thyme, minced (or 1 teaspoon dry thyme)
  • 24-ounce filet mignon (beef tenderloin) steaks, 6-8 ounces each, about 1 ½ inches thick
  • 1/2 cup Merlot wine, or any dry red wine
  • 1 1/2 cups beef broth
  • 1/2 cup whipping cream
  • 1 1/4 teaspoon sea salt, divided
  • 1/2 teaspoon black pepper, divided
PREPARATION:
  • Heat FIREDISC®cooker to just below medium heat. Melt in two tablespoons of butter and one teaspoon of oil. Add sliced mushrooms.
  • Cook 5 minutes, or until mushrooms soften and most liquid evaporates. Add diced onion. Cook 3 minutes, stirring.
  • Add garlic, one tablespoon thyme, ¼-teaspoon salt, and ⅛-teaspoon black pepper. Stir for 2 minutes, or until garlic is fragrant.
  • Transfer mushrooms to a large plate. Wipe FIREDISC® cooker clean with wet paper towels. Use Ultimate Gripping Weapon or similar tongs. Season steaks all over with 1 teaspoon salt and ¼-teaspoon black pepper.
  • Place two tablespoons of butter and one teaspoon of oil in the FIREDISC® cooker. When butter is hot and finished foaming, add seasoned steaks and sear 3 to 5 minutes per side for medium-rare, 5 to 6 minutes for medium doneness. When steaks reach the desired doneness, transfer them to the plate with the mushrooms.
  • Add ½-cup red wine and boil down until reduced by half, about three minutes. Scrape the bottom of the disc to deglaze. Add beef broth.
  • Broil until ⅔-cup of liquid remains in the ‘disc, about 5 to 7 minutes. Stir in ½-cup cream. Boil 2 minutes, or until thickened.
  • Season sauce to taste with salt and pepper if desired. Add steaks and mushrooms back to the pan. Spoon some sauce over the steaks.
  • Once steaks heat through, remove from heat. Serve garnished with fresh thyme sprigs if desired. NOTE: Adjust cooking temperature if any stage of this — or any — recipe goes too fast or gets too hot. Just turn the heat down a bit and keep on cooking.
