• 2 cups of Arborio rice
  • 2 tsp of onions (Chopped)
  • 2 tsp olive oil
  • 2 cups of Chopped mushrooms
  • ½ cup of white wine
  • 3 tsp of chopped parsley
  • 1 tsp of butter
  • 3 tsp of parmesan cheese grated
  • Salt and pepper to taste
  • 2 quarts of chicken broth


In the Fire Disc get the olive oil to a medium temperature and then sear the mushrooms. After 5 min add the onions and cook for more 5 minutes. Now add the rice and let it cook for 1 min. Once the rice is hot add the white wine and let it reduce. Now add the chicken stock (1/3 of it) and then add the rest once the liquid is absorved. Once the rice is fulled cooked (about 20 min) turn the fire disc off and add the parmesan, the parsley and the butter. Make sure it`s well seasoned and enjoy it hot.
