Roasted Fish with Shrimp & Corn Succotash

Fresh seafood with southern succotash, nothing is better when you have fresh catch!
INGREDIENTS:
  • Fresh Snapper, Grouper of your favorite fish - 2 fillets
  • Large Shrimp
  • Bacon Strips
  • Red Onion
  • Fresh Garlic
  • Cut Cherry Tomatos
  • Green Beans Cut
  • Chopped Jalepeno and sweet habanero peppers
  • Chopped zucchini
  • Fresh Corn off the Cob
  • Corn Juice
  • Fish Stock or White Wine
  • Basil and Parsley
  • FIREDISC® Diane's Secret Seafood Seasoning
  • Grapeseed Oil
  • Butter
  • AP Flour
PREPARATION:
  • Cut and prepare all ingredients
  • Add Grapseed Oil to the FIREDISC®
  • Sprinke the FIREDISC® Diane's Secret Seasoning on the Fish and Shrimp
  • Take one side of the Fish and pat into the flour and then place in the oil
  • Remove excess oil
  • Move Fish off to the heat zone 3 along the edges
  • Add Bacon in center and cook until complete and then move to zone 3
  • Take one ear of corn and remove corn and add to blender to create your corn juice
  • Next, add onions and then cherry tomatoes, habanero peppers and jalapeno peppers. Continue to stir.
  • Add garlic, chopped zucchini, salt and pepper - cook until tender
  • Add your liquid wine or both and then add shrimp
  • Cover with Lid to simmer
  • Add Green Beans, corn and then add the corn juice, lower heat immediately
  • Add Garnish and Serve
