Diane’s Sweet Potato Soup


  • 2-large sweet potatoes
  • 1-large sweet onion
  • 1-lb sweet Italian sausage
  • 2- tablespoons minced garlic
  • 3- tablespoons olive oil
  • 2- cups sliced mushrooms fresh
  • 4- cups baby spinach stems removed
  • 10- oz. penne pasta
  • 2- boxes chicken broth approx. 32oz or more
  • Fresh shredded Parmesan cheese
  • Salt and pepper


  1. Dice up onions
  2. Cut potatoes into chunks medium size peel first
  3. Remove casing from sausage and cut into chunks small
  4. Remove stems from spinach
  5. Heat oil, garlic and onions in FireDisc on low until soft
  6. Add sausage chunks and cook until approx. cooked
  7. Add chicken broth and simmer
  8. Add potatoes and simmer for about 10 minutes
  9. Add pasta and mushrooms and simmer about 10 minutes
  10. Last add spinach and cook until wilted
  11. Serve in bowls and top with fresh shredded Parmesan cheese
  12. Salt and pepper to taste
