INGREDIENTS:
- 2-large sweet potatoes
- 1-large sweet onion
- 1-lb sweet Italian sausage
- 2- tablespoons minced garlic
- 3- tablespoons olive oil
- 2- cups sliced mushrooms fresh
- 4- cups baby spinach stems removed
- 10- oz. penne pasta
- 2- boxes chicken broth approx. 32oz or more
- Fresh shredded Parmesan cheese
- Salt and pepper
- Dice up onions
- Cut potatoes into chunks medium size peel first
- Remove casing from sausage and cut into chunks small
- Remove stems from spinach
- Heat oil, garlic and onions in FIREDISC® on low until soft
- Add sausage chunks and cook until approx. cooked
- Add chicken broth and simmer
- Add potatoes and simmer for about 10 minutes
- Add pasta and mushrooms and simmer about 10 minutes
- Last add spinach and cook until wilted
- Serve in bowls and top with fresh shredded Parmesan cheese
- Salt and pepper to taste
