Texas Stuffed Grilled Burgers

Get both hands ready for this big ol’ crazy !@#$!. It’s Amarillo-to-Corpus Christi big, and El Paso-to-Houston wide. With lots of good stuffing around Midland and Waco.
INGREDIENTS:
  • 5 pounds lean ground beef
  • 6 tablespoons Worcestershire sauce
  • 2 teaspoons hickory seasoning (optional)
  • Salt and pepper to taste
  • 2 cups chopped onion
  • 2 cups chopped fresh mushrooms
  • 2 cups chopped cooked ham
  • 3 cups shredded cheddar cheese
PREPARATION:
  • Heat FIREDISC® cooker to high with light oil. In a bowl, mix beef, Worcestershire sauce, hickory seasoning, salt, and pepper until just blended. Make 20 balls.
  • Flatten balls into patties. On one-half of the patties, distribute onions, mushrooms, ham, and cheese. Cover piles with remaining patties. Seal all edges of patties together to enclose the filling.
  • Grill patties for 8 to 10 minutes per side, or until meat is well done, and cheese in the center melts.
  • NOTE: Adjust cooking temperature if any stage of this — or any — recipe goes too fast or gets too hot. turn the heat down a bit and keep on cooking. Your FIREDISC® cooker heats quickly and evenly.
