GIDDYUP GARDEN STIR FRY

Whoa! Let the flavors fuse in this collision of eastern fare and western flair. This sets a high and delicious standard for spring.
INGREDIENTS:
  • 4 tablespoons avocado oil or substitute
  • 20 ounces bratwurst or your favorite sausage or meat, cut into 1-inch pieces
  • 3 red potatoes, roughly chopped
  • 2 yellow squash, sliced
  • Salt and pepper
  • 1 red bell pepper, cored and sliced
  • 1 green bell pepper, cored and sliced
  • 2 small white onions, sliced
  • 2 garlic cloves, minced
  • 3 tablespoons honey mustard
  • ½ 6-ounce light beer or lemon-lime soda
  • 2 tablespoons Worcestershire sauce
  • ½ cup chopped green onion for topping
PREPARATION:
  • Heat your FIREDISC to medium-high heat. Add avocado oil.
  • Add sausage and cook until browned and crisped, while stirring. Move meat to outer heat ring.
  • Add potatoes. Cook until about almost done. Push to the top of the 'disc or remove. Add squash. Cook until tender, about 3 minutes, stirring. Add salt and pepper to taste.
  • Add bell peppers and onions. Cook until tender, stirring.
  • Stir peppers, onions, squash, potatoes, and sausage together. Stir in garlic. Cook for about 3 minutes, stirring.
  • In a small bowl, whisk together the honey mustard, beer, and Worcestershire sauce. Pour sauce into meat mixture. Reduce heat to medium-low. Cook until the sauce reduces, stirring.
  • Season to taste with salt and pepper, if needed. Top with green onion. Serve warm. Also great over rice.
