Wild Turkey Piccata – Wild Rice w/ Bacon Brussel Sprouts

INGREDIENTS:
  • Grapeseed oil
  • Bacon
  • Brussel Sprouts
  • Turkey Stock and precooked wild rice
  • 1 or 2 Wild Turkey Breasts
  • Freakin Fowl Seasoning
  • Shallots
  • Garlic
  • White Wine
  • Butter
  • Chives
  • Fresh Rosemary
  • Capers
  • Juice of 1 Lemon
  • Salt and Pepper
  • Cranberry sauce
PREPARATION:
  • Add Grapeseed oil to FIREDISC
  • Add Cut Bacon
  • Add Cut Brussel Sprouts - Brown and slide to edge
  • Add Turkey Stock and precooked wild rice - Cook for 2-3 min
  • Add more Grapeseed Oil
  • 1 or 2 Wild Turkey Breasts - Cut into equal cutlets
  • Season to taste - Freakin Fowl Seasoning
  • Flour turkey cutlets
  • Fry in grapeseed oil - Brown Cutlets and Slide to outside
  • Add more oil if needed
  • Add Shallots
  • Add Garlic
  • Saute for 2-3 minutes
  • Add White Wine
  • Add Butter, Chives, Rosemary and Capers, Juice of 1 lemon, Salt and Pepper
  • Put Turkey Cutlets back in sauce and saute for 5min
  • Plate and add cranberry sauce
