DENVER STEAK & CHEESE FRIES

If you elect to cook like a major-leaguer, act like an all-star. These mile-high cheese fries bring attitude from high altitudes. NOTE: This recipe requires marinating meat for hours or overnight.
INGREDIENTS:
  • For fries:
  • Idaho potatoes
  • Cooking oil of your choice
  • FIREDISC® Freakin’-A-Fowl Seasoning
  • For sirloin, peppers, and onions:
  • 3 pounds sirloin steak cut into 1-inch pieces
  • ¼ cup Teriyaki or soy sauce
  • ¼ cup packed light brown sugar
  • 3 tablespoons olive oil plus additional for cooking
  • 2 tablespoons chopped Italian parsley or cilantro
  • 3 cloves garlic minced
  • 1 teaspoon red pepper flakes
  • 2 teaspoons FIREDISC® Bodacious Beef Seasoning
  • 1 red bell pepper, seeded and sliced
  • 1 green bell pepper, seeded and sliced
  • 1 large sweet onion, cut into thin wedges
  • Black pepper to taste
  • ¾ cup chopped scallions
  • For sauce:
  • Equal parts Worcestershire sauce, soy sauce, steak sauce
PREPARATION:
  • For fries:
  • Scrub dirt off potatoes. Chop into thick slices. Do not peel.
  • Deep fry in oil on medium-high heat until golden brown and crispy. Toss immediately in Freakin’-A-Fowl Seasoning. Remove to warm oven while you prepare the sirloin.
  • For sirloin, peppers, and onions:
  • Rinse, pat dry, and cut sirloin into 1-inch pieces. Whisk together teriyaki sauce, brown sugar, oil, parsley, garlic, and red pepper flakes. Place into a plastic storage bag. Refrigerate for several hours or overnight.
  • Remove sirloin from the marinade. Discard marinade. Heat a few drizzles of olive oil in FIREDISC® cooker over medium-high heat.
  • Add sirloin. Cook for 5-7 minutes until browned and to your preferred doneness. Season with 1 teaspoon of Bodacious Beef Seasoning.
  • Remove from ‘disc to a platter to rest. Add sliced bell peppers and onion wedges to the ‘disc. Season with 1 teaspoon Bodacious Beef Seasoning and black pepper to your taste.
  • Add olive oil if needed. Cook for 5 minutes, scraping brown bits from the bottom of the ‘disc. Cook until browned and crispy tender. Add sirloin back to ‘disc.
  • Stir until heated through. Add spoonsful atop bowls of FIREDISC® fries. Top with sauce blend and scallions.
  • Serve immediately and pray for the bullpen.
