Chef Jason Campbell’s – Sweet Tea Glazed Brussel Sprouts.

  • 1 cup bacon fat or high temp oil
  • 5# split Brussels sprout
  • 32 oz of sugar
  • 2oz lemon juice
  • 8 oz water
  • 8 oz unsweetened tea (store bought is fine)
  • 2 oz slow and low whiskey or favorite bourbon or whiskey
  • 1/2 # thinly sliced country ham or prosciutto
  • 2 cups chunky cranberry sauce
  • Lemons to zest
  • Seafood seasoning blend
  • Preheat FIREDISC® over high heat
  • Add bacon and melt
  • Add Brussels sprouts and dont stir for 3-4 minutes, stir and repeat until sprouts are golden brown but not cooked through
  • Move sprouts to outer rim
  • Wipe FIREDISC® clean
  • Add water, lemon juice and bourbon
  • Add sugar and stir to dissolve, cook over medium high heat until the sugar is an amber color and thickens
  • Add tea and stir
  • Combine sprouts with glaze, the zest of 2 lemons and season with Seafood seasoning to your liking
  • Turn off FIREDISC®
  • Transfer sprouts to plating vessel
  • Add cranberry sauce over the top
  • Add sliced ham
  • Zest of one lemon
