INGREDIENTS:
- 1 cup bacon fat or high temp oil
- 5# split Brussels sprout
- 32 oz of sugar
- 2oz lemon juice
- 8 oz water
- 8 oz unsweetened tea (store bought is fine)
- 2 oz slow and low whiskey or favorite bourbon or whiskey
- 1/2 # thinly sliced country ham or prosciutto
- 2 cups chunky cranberry sauce
- Lemons to zest
- Seafood seasoning blend
- Preheat FIREDISC® over high heat
- Add bacon and melt
- Add Brussels sprouts and dont stir for 3-4 minutes, stir and repeat until sprouts are golden brown but not cooked through
- Move sprouts to outer rim
- Wipe FIREDISC® clean
- Add water, lemon juice and bourbon
- Add sugar and stir to dissolve, cook over medium high heat until the sugar is an amber color and thickens
- Add tea and stir
- Combine sprouts with glaze, the zest of 2 lemons and season with Seafood seasoning to your liking
- Turn off FIREDISC®
- Transfer sprouts to plating vessel
- Add cranberry sauce over the top
- Add sliced ham
- Zest of one lemon
