FIREDISC GRILLED POTATO SKINS

There’s no debate: The skins are where the flavor is. These skins are great on the tailgate, by the camper, or out on the back deck. The secret: Use Yukon Gold potatoes. Trust us on this one.
INGREDIENTS:
  • 3 tablespoons butter (softened)
  • 1 teaspoon dried rosemary
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 8 medium Yukon Gold potatoes (or 8 small russet potatoes)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 small onion, finely diced
  • 4 to 5 slices cooked bacon, crumbled
PREPARATION:
  • Gather ingredients. Preheat FIREDISC® cooker to medium heat. Combine butter, rosemary, salt, and pepper in a small bowl.
  • Cut potatoes in half lengthwise. Place potatoes in microwave for 6 to 7 minutes. (You might need to do this in batches.)
  • Hollow out the center of each half; reserve the potato interior for another use. Brush potato skins with butter mixture. Place potatoes on Ultimate Steaming Grate rack cut side down.
  • Cover with Ultimate Flattop Lid. Grill for 5 minutes. Flip.
  • Grill for 3 minutes more. Divide shredded cheese between hollowed-out potatoes. Cook for 2 to 3 minutes more, until cheese melts.
  • Remove potatoes from the FIREDISC® cooker. Top each with sour cream, onion, and crumbled bacon. Serve hot and enjoy.
