To some, a pumpkin is simply a vehicle to deliver one of fall’s most scrumptious snacks: pumpkin seeds. There’s a right and not-so-right means of making them. We’ve taken the learnings over the years and crammed them into this recipe.
INGREDIENTS:
PREPARATION:
  • With a large spoon or ice cream scoop, remove the inside pulp, stringy fibers, and entangled raw seeds from the pumpkin. Place seeds in a colander. Wash and remove most of the pulp left on seeds.
  • Warm FIREDISC® cooker to medium-high heat. Dry the seeds thoroughly with a towel. Toss the seeds in a bowl with olive oil, salt, and Fully Fired Up Fajita Seasoning.
  • Add oil to the FIREDISC® cooker before adding seeds. Roast at moderate heat for 12 to 15 minutes, tossing occasionally for even browning. Seeds are ready when they put off a nutty aroma and take on a golden-brown color.
