FRIED TILAPIA WITH CORN SALSA

It's all about the corn salsa that makes this fried tilapia recipe from fine to divine.
INGREDIENTS:
  • 1 lb tilapia fillets
  • 4 eggs, beaten with 1 tbsp. of water
  • 2 c panko bread crumbs
  • Flour Mixture (combine and mix)
  • 1 c flour
  • 2 tbsp. salt
  • 2 tbsp. garlic powder
  • 1 tbsp. white pepper
  • Corn Salsa (combine and mix)
  • 1 14oz can corn
  • 1/2 c red onion, diced
  • 1 red bell pepper, diced
  • 1 lime, juiced
  • 1 1/2 quarts fry oil
  • Touch of salt
PREPARATION:
  • Dredge the tilapia in the flour mixture, dunk in egg wash, then bread with panko
  • Set fish aside
  • Mix corn salsa together in a medium size bowl.
  • Set FIREDISC®c to HIGH with fry oil, allow oil to reach 375 degrees F and fry fish in batches of 4 or 5 for 5 minutes.
  • Drain fish on a paper lined plate and top with a touch of salt
  • Allow fish to cool, top with salsa mixture, serve, and enjoy!
