JUAN’S ROCKY MOUNTAIN OYSTERS

If these are already your jam, you’re down with it. If you’ve never tried them … ask someone who has. They’re damned delicious and Coloradans know it.
INGREDIENTS:
  • 2 pounds calf testicles*
  • 2 cups beer
  • 2 eggs, beaten
  • 1 ½ cups flour, all-purpose
  • ¼ cup yellow cornmeal
  • Salt and ground black pepper to taste
  • Vegetable oil
  • 1 tablespoon hot pepper sauce
  • *Ask your butcher for these. Get calf, not bull.
PREPARATION:
  • With a sharp knife, split tough skin-like muscle that surrounds each testicle. Remove skin (easy, with frozen testicles; peel while thawing). Either leave it whole or slice each testicle into ¼- to ½-inch-thick ovals.
  • Place slices in a large pan or bowl with enough beer to cover them. Cover container. Let sit for 2 hours.
  • In a shallow bowl, combine eggs, flour, cornmeal, salt, and pepper to make a wet flour dredge. Best at a batter consistency. Remove testicles from beer.
  • Drain. Dredge in wet flour dredge. In a FIREDISC® cooker, heat oil to 375 degrees Fahrenheit.
  • Deep fry for 3 minutes or until golden brown (will rise to the surface when done). Drain on paper towels. Serve warm with your favorite hot pepper sauce.
