MALAYSIAN BANANA FRITTERS

For those who seek something familiar for dessert, but a little different. These fritters are easy and exotic.
INGREDIENTS:
  • 2 ripe bananas (if using small sugar bananas, use 4)
  • 1 cup wholewheat flour
  • Coconut milk
  • 1 egg
  • Grapeseed or avocado oil
PREPARATION:
  • In a big bowl, mash bananas with a fork. Crack and fold in egg. Add wholewheat flour a spoonful at a time till you can drop a spoonful of the mixture from a spoon.
  • Add milk if it gets too thick. Adjust till the consistency is right. Heat oil in FIREDISC® cooker. Test oil heat by dipping a chopstick or wooden spoon in. If bubbles form, it’s ready.
  • Use a tablespoon to scoop the mixture and gently drop it into the oil. Drop about 4-5 blobs into the oil in one batch. As soon as they turn color, turn over with an Ultimate Frying Weapon.
  • Take them out to drain on a rack or on a paper-lined plate. Cover. Work through the bowl of mashed banana mix.
  • Remove all paper from the plate before serving. Put two scoops of ice cream onto each plate and sprinkle with nuts and or sesame seeds. Add strawberries, add a couple of banana fritters.
