Sizzling Sirloin With Red Hot Chilli Pepper Miso

INGREDIENTS:
  • FOR STEAK
  • 4 half-pound sirloin steaks (preferably Wagyu)
  • Canola oil
  • Sea salt
  • Cracked black pepper
  • FOR MISO
  • 3/4 cup sriracha chili sauce
  • 3/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 1/2 tablespoons vegetable oil
  • 1/3 cup honey
  • 3 1/2 tablespoons water
  • 1 teaspoon sesame oil
  • 2 1/2 teaspoons ginger
PREPARATION:
  • Bring steak to room temperature.
  • Rub in canola oil and season generously in sea salt. Heat FIREDISC® to high heat.
  • Sear for 3 minutes. Turn and cook for 2 to 3 more minutes for medium-rare.
  • Season generously with cracked black pepper during the final minute of cooking. Remove from the heat. Let rest for 4 minutes.
  • Add all ingredients for red hot chili pepper miso to a blender. Mix until everything is smooth and vibrant in color.
